We bought a 1/4 from Walton's. They charge a flat amount, which includes processing. Their animals are butchered on the farm by a mobile butcher. They harvested organs for us for dissection and tails for us to eat. The rest was ready later. We didn't get the variety of cuts (no skirt steak, no flank steak, no stew meat, no rib steaks, no porterhouse steaks and we got way less soup bones, but we got a lot more t-bone steaks with this overall much smaller haul.)
Our last quarter had 142 pounds of meat, costing $803. This one had 106 pounds of meat, costing $600.
Ground beef: 33 lbs
Round Steak: 4 packages, 10 pounds
Arm Roast: 2 packages, 9 pounds
Brisket: 4 lbs
Short Ribs: 3 packs, 9 lbs
Soup bones: 3 packs, 2 lbs
Tbone Steak: 7 packs, 14.5 lbs
Sirloin Steak: 4 packs, 6.5 lbs
Sirloin Tip roast: 1, 5lbs
Sirloin Steak: 4, 6.5 lbs
Total cost/lb of meat was $5.66/lb, also got bones for stock, oxtails to cut ourselves, and heart and other organs for dissection.
