We got a hog from Ibelings again this December. I did find we had at least 2 hams left, so I changed the cut order to include only 1 side being cut into two hams, and the other side being put to ground pork.
Hog was 350lbs, cost $150
Cut was at Sorgs, cost $303.40
Paperwork says that the dressed weight was 265lbs, but we got 209 pounds back. Not sure what would be missing, but I don't know if that weight is actually the hanging weight?
We paid
$85 for the harvest fee
$.76/lb (265 pounds) for cut/wrap/freeze
$10 for boning out the ham (didn't realize there would be this fee)
